It is made exclusively from the wild-growing Tobalá agave (Agave Potatorum), often considered the "queen" of agave varieties, which matures for at least twelve years to reach optimal ripeness. The production follows traditional methods: the agave hearts are slow-cooked for several days in pre-Hispanic volcanic stone pits, ground using a stone mill (tahona), fermented in pine wood vats with local yeasts, and double-distilled in copper stills. This meticulous process yields a full-bodied, crystalline mezcal with a complex and nuanced flavor profile. On the nose, it is notably fruity, offering notes of pineapple, apple, citrus, cucumber seeds, and a finishing touch of ash and cloves. The palate is an explosion of flavors, presenting a complex assemblage of citric and spicy notes, caramelized agave, smoked cacao, and toasted oak. The finish is long, warming, and intensely smoky, revealing the sweetness of the ripe agave and a hint of pepper, making it ideal for sipping neat.
