So far, straightforward. But the cask tells a different story.\u003c\/p\u003e\n\u003cp\u003eThe barrel is stamped Pedro Ximénez. The cask end is tagged Oloroso. Ximénez-Spínola is a small, iconoclastic bodega in Jerez that has never been bound by convention. We believe this cask held a dry, Oloroso-style sherry made entirely from PX grapes. No sun-drying. No residual sweetness. The PX grapes were fermented dry like a fino or Oloroso, then aged under oxidative conditions. The result is a cask with the nutty, savoury depth of Oloroso and the grape richness of PX in a combination that almost nobody produces.\u003c\/p\u003e\n\u003cp\u003eWhen we saw this oddity sitting in a warehouse in Scotland, we knew immediately.
